In celebration of Pancake Tuesday or as some people call it, Shrove Tuesday, why don’t you make your own today!!
- 135g of plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp caster sugar
- 130ml milk
- 1 large egg, beaten
- 2 tbsp. melted butter
- Sift the flour, baking powder, salt and sugar in a large bowl. In a separate bow, lightly whisk an egg and milk, then whisk in the melted butter.
- Pour the milk mixture in to the dry ingredients and beat until you have a smooth batter. Let the batter settle for a few minutes.
- Heat a non-stick pan over a medium heat and a a knob of butter. When it’s melted add a ladle of the batter. It will seem very thick but that’s fine. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm thick.
- Serve with some maple syrup, jam, butter, Nutella or fruit. Or whatever the hell you want. Sit back and enjoy!!!
